1. Heat a pizza stone under the grill for a while
2. Prepare fish
3. Put fish on a teflon baking sheet
4. Slide sheet onto pizza stone
5. Cook fish

This approach cooks fish from the top (grill) and the bottom using the stored heat in the pizza stone. Perfection
