Lock down ruined pizza for me

Lockdown ruined pizza for me! It's true, it isn't that Covid remove my sense of smell/taste but rather lockdown provided an environment in which I could make the same food every week. Lockdown and our remoteness meant that I couldn't just pop to the shop for a quick loaf of bread but I had to make it. This self-bake adventure with all yeasty-flour mixtures soon included pizza, which has now is really good and refined. I can make a high-quality pizza with nice quality ingredients comparable to a good take-away pizza. In fact, there is only pizza place in Szeged, which could rival my home skills

So, there are several keys to a good pizza and these have been found by trail and error and google

  1. Start with the correct flour, anything not pizza-00 will not produce a good true pizza. This flour is stretchy but doesn't rise as much as bread flour. I do like to supplement my pizza flour with some graham flour which give pizza a more earthy, flat bread taste and texture.
  2. Add a little olive oil to the flour/water/yeast mix... it makes everything better.
  3. Use a food processor to knead the dough -- they aren't just for gathering dust in cupboards.
  4. Roll it thin - I know is this is heresy and should be done with hands and semolina but I can make a nice constant pizza using a rolling pin. My manual attempts have always failed due to a hole.
  5. Don't make a wet sauce... Concentrated tomato puree is excellent for home-oven pizza. Ovens over 300C probably don't have this issue.
  6. Get the oven and a pizza stone hot - I can get up to 240C in my oven, it really does make a difference. Place the pizza stone as near to the top as possible to make a hot space. My Candy oven has a pizza mode which enables a more uneven heat distribution.
  7. Don't overload the pizza. Thin pizzas require thin toppings.
  8. Get a oven shovel... It will reduce the number of burns on your arms/hands.
  9. Have an animal and a laugh when it goes really wrong. There have been many burnt offering given to the dog ... Don't worry, next week's will be better.
